Following an extensive renovation, Singapore’s first and only Two Michelin-Starred Shoukouwa Sushi Restaurant at One Fullerton unveils a new terroir-inspired interior; the revamp is spearheaded by Tomoyuki Hisano, Japanese interior designer and founder of Tom Designs & Associates. The new interior design concept creates a central connection between Japan’s cultural traditions and natural beauty and takes its guest on a journey of relaxation, cosiness and enjoyment when dining.
Among the design features are curved low bamboo fences or inuyarai, which were originally installed in Kyoto neighbourhoods in ancient times, at Shoukouwa‘s entrance. At the entrance of Shinto shrines, you will be greeted by striking red Japanese stucco walls with a ‘juraku’ finish and a water fountain reminiscent. There is a pebble walkway that leads you to an eight-seater Main Sushi Counter. The Private Dining Room showcases luxurious gold and silver wallpaper with Japanese art motifs, accommodates six guests.
World-Class Omakase Matched with Fine Sake and Wines
Shoukouwa has also engaged Singapore’s first Master of Wine, Tan Ying Hsien, as its wine advisor to curate the restaurant’s new wine, sake and mixed pairings. The champion sake of International Wine Challenge in 2019, Katsuyama Ken Junmai Ginjo is delightfully smooth, round and crisp, making for an immaculate pairing to the clean, sweet-savoury Kasugo nigiri.
Shoukouwa still insists on sourcing its produce at a frequency of four times a week from the famed Toyosu Market to maintain its time-honoured cuisine standards with impeccably fresh ingredients. Diners’ beloved Head Chef, Kazumine Nishida still remains at the helm of the restaurant. His exquisitely crafted Edomae sushi is perfectly paired with the new wine and sake curated by Master of Wine, Tan Ying Hsien.
