7 Bountiful Pen Cais for CNY 2017

Reunion dinners are a time to gather with family and friends, and what better way than to dig into a cornucopia of indulgent ingredients together? The traditional pen cai consists of a whole gamut of ingredients (each with its own symbolic, auspicious meaning) served in layers in a large claypot or basin. Popular ingredients in the pen cai include abalone, fa cai (black moss), whole chicken, pig’s trotters, as well as dried oysters, dried scallops and sea cucumber. Tofu puffs, mushrooms and cabbage are also popular additions as they absorb the rich gravy to transform into juicy flavour bombs.

A slab of pork belly from the Netherlands is slow-braised for over three hours in a flavourful gravy until meltingly tender. The bountiful dish from Man Fu Yuan comes with over 18 ingredients layered in a traditional claypot. Ingredients include a spring chicken stuffed with pearl rice, spiky sea cucumber, goose web, Canadian lobster as well as the prerequisite abalone, seamoss and mushrooms. Available from 2 Jan-11 Feb.
